The Philosophy Behind the Pour

When most people think of mocktails, they imagine a fruit juice dressed up with a garnish. We wanted to challenge that assumption entirely. A great mocktail should offer the same sensory experience as a great cocktail — the ritual of watching it being prepared, the anticipation as it is placed before you, the first sip that reveals layers of flavour you did not expect. To achieve this, we use techniques borrowed from modern mixology: fat-washed syrups, clarified citrus, smoked infusions, and house-made shrubs and cordials.

Our Sunset Bliss (GATH-MCK-001) is the most visually striking drink on the menu — a gradient of passion fruit, orange, and grenadine that mirrors the Abu Dhabi skyline at dusk. The Virgin Mojito (GATH-MCK-002) is our most ordered mocktail, using a double-muddling technique that extracts maximum essential oil from both the mint and the lime. The Berry Fizz (GATH-MCK-003) combines muddled mixed berries with a raspberry shrub and soda. The Passion Fruit Spritz (GATH-MCK-004) is our most elegant offering. On warmer days, the Watermelon Cooler (GATH-MCK-005) is pure refreshment. Finally, the Ginger Lemon Fizz (GATH-MCK-006) delivers a satisfying kick from our house-fermented ginger syrup.
