From Dough to Oven: The Craft Behind GATHER’s Pizza Menu

Pizza is one of those rare foods that transcends culture, age, and occasion. At GATHER, we took pizza seriously from the very beginning — not because we wanted to compete with Naples or New York, but because we believe that a well-made pizza is one of the purest expressions of culinary craft there is. Flour, water, salt, yeast, and fire — from these humble ingredients, something extraordinary can emerge.

The Dough: 72 Hours in the Making

Great pizza begins and ends with the dough. Ours is a slow-fermented dough that rests for a minimum of seventy-two hours before it sees the inside of an oven. We use a blend of Italian Tipo 00 flour and a small percentage of whole wheat flour, which gives our crust a delicate chew with a subtle nuttiness. The dough is mixed at low speed for an extended period to develop gluten structure, then divided into individual portions and cold-fermented. This long, slow fermentation is the key to our crust’s complex flavour and its distinctive leopard-spotted char when baked.

Six Pizzas, Six Stories

Our pizza menu features six distinct offerings. The Margherita (GATH-PZZ-001) is our benchmark — San Marzano tomato sauce, fresh mozzarella, basil, and extra-virgin olive oil. The Truffle Mushroom (GATH-PZZ-002) is our most indulgent option with wild mushrooms, truffle cream, and shaved Parmigiano-Reggiano. The BBQ Chicken (GATH-PZZ-003) combines smoky barbecue sauce, grilled chicken, red onion, and cilantro. The Pepperoni (GATH-PZZ-004) uses premium spicy pepperoni that curls into crispy cups during baking. Our Four Cheese (GATH-PZZ-005) is a study in dairy — mozzarella, gorgonzola, fontina, and Parmigiano-Reggiano. Finally, the Veggie Supreme (GATH-PZZ-006) is our plant-powered hero.

Pizza is proof that simple things, done with intention and care, become extraordinary.
